Hello. I’m a new JUCE user, though I downloaded JUCE in 2018.
I currently have JUCE v5.3.2, and am wondering if I should update to the current v5.4.5.
I’m running MacOS Sierra 10.12.6.
Any insight much appreciated.

Yes, the minimum macOS versions for building JUCE projects is 10.11 (you’ll need at least Xcode 7.3.1) and you can target down to 10.7.

Have you had a chance to test this:
as per title, when e.g. I try to auval it on a Yosemite machine, I get the following:
